Mushroom ‘Meat’balls

Ingredients (makes 8)

  • 1 small white onion (diced)
  • 1 1/4 cups (120g) mushrooms (sliced)
  • 1/2 (50g) cup oat flour
  • 1/2 cup (50g) breadcrumbs
  • 1/4 cup (15g) coriander
  • 1 tsp minced garlic
  • 1 tbsp nutritional yeast
  • 1 flax seed egg
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • Avocado oil

    Method

    1 Heat the avo oil in a large frying pan over medium heat.
    2 Cook the onions until they start to brown, then add the mushrooms and turn the heat up to high and cook for 10 – 15 minutes. Remove from the heat and allow to cool down.
    3 Add the mushroom and onions to the food processor along with the rest of the ingredients apart from avo oil and process until your desired texture.
    4 Cover and allow to cool in the fridge for 1 hour.
    5 Yield 8 balls and fry in a little olive oil over a medium heat to cook and crisp up!
