ROASTED RED PEPPER CAULIFLOWER

This was such a satisfying dish and is super a simple recipe!

You’ll need:
100g cauliflower, cut into florets
2 heaped tsp red pesto
1 tbsp nutritional yeast
Avocado oil
1 salmon fillet
80g asparagus

Mix the cauliflower, pesto and nutritional yeast together in a bowl so that the cauliflower is covered. Lay out on baking paper on a baking tray and bake in the oven at 180C for 20-25 mins, tossing halfway through. Heat the avocado oil in a pan and cook the salmon. Add the asparagus to the pan 5 mins before the salmon is cooked to your liking. Serve up with the roasted cauliflower and enjoy!
