This is the easiest homemade pasta sauce that adds so much flavour to a simple pasta dish!
You’ll need:
2 red bell peppers
Olive oil
1/4 cup oat milk
3 tbsp tomato puree
1 tsp mixed herbs
1 tsp paprika
1/2 tsp celery salt
Black pepper to taste
150g dried penne
60g fresh mozzarella balls
Cut the bell peppers into strips and drizzle with olive oil. Roast in the oven for 20 mins. Add the roasted peppers, oat milk, tomato puree and seasoning to a food processor or blender and blitz. The mixture doesn’t have to be smooth.
Cook the pasta according to pack instructions. Drain and pour into an oven safe dish. Mix the sauce with the pasta and top with mozzarella. Bake in the oven for 20 mins, allowing the cheese to melt and pasta to crisp slightly. Serves 2. Enjoy!
