these are the Sugar Free cupcakes I made for Romeo’s birthday! Thought I’d share for anyone looking for an easy kid friendly baking recipe that’s nutritious too!

You’ll need:
1 1/2 cups plain flour
1 tsp baking powder
1/2 cup oat milk
1/4 cup avocado oil (I use olivado)
2 eggs
1 ripe mashed banana
1 tsp vanilla stevia
1 fresh lemon, cut into quarters
A generous handful of blueberries

Preheat the oven to 180c and line a cupcake tin with cases (makes 6). In a bowl, mix all the wet ingredients together then stir in the flour and baking powder. Squeeze in the fresh lemon juice and add the blueberries. Distribute the mix into the cases and bake for 22-25 mins. Allow to cool and enjoy.

Ideally, you do not want to be serving your kids sugar unnecessarily so these sugar free cupcakes are a perfect alternative to your standard cupcake which are often very high in sugar.
