summer salad

Used up some leftovers to put together this nutritious medley aka a summer salad. My son actually ended up snacking on it too!

I used:
1/2 a large sweet potato, cut into chunks
80g broccoli florets
80g cooked chickpeas
100g puy lentils
80g strawberries
Avocado oil
*can add dressing of choice

Drizzle the sweet potato with avocado oil and paprika and bake in the oven for 20 mins at 180C. Add the broccoli to the tray and bake for another 10-15 mins. Serve in a bowl and add the chickpeas, lentils and strawberries. Enjoy!
