whole food pancakes

I had these ingredients leftover in the fridge & from various dishes so thought I’d turn them into one recipe… You can add in extras & you’re getting in lots of plant points! Try these whole food pancakes!

I used:
1 ripe banana
1 small carrot
1/4 red bell pepper
A handful of spinach
5 strawberries
1 egg
1/2 cup flour
1/2 tsp nutmeg
1/4 cup oat milk
Ghee butter

Blend all ingredients except the flour in a blender. Add to a bowl and mix with the flour. Heat the butter in a pan and cook the pancakes. Serve straight away or save for snacks – perfect for kids!
